Season the meat with the rub. Taste and adjust the
seasoning if necessary.
Knead thoroughly and leave to rest in the fridge for 1 hour. Dice the
cheese. Flatten a small amount of the meat mixture in the palm of your
hand, add the diced cheese and shape into balls. Place 2 slices of
bacon in a cross shape, place a ball in the centre, close up all four
sides and secure the bacon with a toothpick.
Grill: Cook indirectly at 120°C for 40 minutes. Brush with the sauce and
leave to glaze for a further 20 minutes.
Oven: Preheat to 150°C fan. Place the balls on a baking tray lined with
baking paper and cook for 20 minutes. Increase the temperature to 220°C,
brush the balls with the sauce and cook for a further 10 minutes. |
