Shrimps Ramen Soup

Ingredients for 2 persons

250 g shrimps
1 tbsp. sesame oil
3 tbsp. shallots (chopped)
250 g brown mushrooms
1,2 l vegetable soup
150 g ramen noodles
1 tsp. soy sauce
1 tbsp. Sriracha
3 tbsp. spring onions (chopped)
Juice of half a lemon


Defrost frozen shrimps. Halve or quarter mushrooms depending on size.
In a saucepan, fry shallots and mushrooms in 1 tbsp. sesame oil until golden and tender, then remove. Add the soup to the pot, bring to the boil and cook the noodles according to the package instructions. One minute before they are al dente, add soy sauce, sriracha and prawns to the pot. Using tongs, divide the noodles between two bowls, add the stir-fried vegetables, pour in the soup, add the prawns and top with the spring onions.
