| Heat the oil in a pan and roast the mustard seeds and cumin seeds for 1-2 minutes. Add the onion and fry for approx. 10 minutes until golden brown. Stir in the garlic, chilli and ginger and fry for 2 minutes. Add the tomatoes, salt and spices and fry for another 2 minutes. Cover and simmer the peas, cauliflower and potato with 125 ml water until al dente. Serve the curry sprinkled with parsley. | |||||||||||||||
